I was hit in the rear nearly a year ago and have gone through therapy and chiro care. I've racked up about 7000 in medical bills. I'm done with my care but the insurance seems to be taking forever to settle with me. How much can I anticipate? I've not been able to work, and it's been hell on me and my family. They're going to make me a cash offer. How much can I anticipate and How much should I settle for?

Possibly nothing. You don't state what your injuries are. You don't say why you can't work. It's very easy to wrack up $7K in chiro bills, from just bumps and bruises. If you're not disabled, then the not working isn't going to be compensated. If you're not working because of “stress” “fear” or “anxiety”, you're not going to be compensated.
If you're asking, is there a rule where you get three times your medical bills, then no, there isn't any such rule.
