how are you assigned to the rooms? when do they give you a list or how do they let you know what room is next?

I believe you are talking about a break out report. Most housekeeping departments use what is called a break out report to assign rooms to their housekeepers. If the hotel charges by the person the breakout report will also show how many people you are cleaning up after. The list is generated after the night audit at the hotel has already run and all of the charges have been posted.
The list is given to you in the morning, and may contain more or less rooms than other housekeepers depending on occupancy and/or room type. When you are finished cleaning the room you have the option to call it into the front desk, call an inspector, or enter the room's status on the room phone.
